This is not so much a recipe as it is a technique. I was getting a little bored with the usual chicken dishes we were eating - grilled chicken breasts (with various rubs and sauces,) chicken parmesan, chicken enchiladas, chicken salads - you know, all the same stuff over and over. I have to admit I'm actually getting a little sick of chicken, so I started looking for other things I could do with it. From that I had an inspiration - one way to make *ANYTHING* better is to incorporate bacon, and another is to run some smoke over it. So - Bob's bacon wrapped chicken was born.
First - I grabbed one of those family packs of chicken thighs. This recipe might make breasts better - but I wanted rich, juicy, dark meat for a change. I seasoned with plain old Lowry's Season Salt, and then wrapped each piece in a full piece of bacon. Smoked 'em in the Traeger at 350 degrees for about an hour and voila - chicken with a bacon twist.
